An easy cheese souffle recipe for you to make at home.

  1. Preheat the oven to 400°F (200°C).
  2. Brush butter on the bottom and sides of two 5 1/2-ounce ramekins. Add sugar, rotate to coat, and pour out the excess. Place ramekins on a shallow baking pan.
  3. Separate the eggs into 2 bowls. Add sugar, flour, 1/4 teaspoon salt, vanilla extract, lemon zest, cream cheese, and Cheddar cheese to the yolks. Mix with a spatula until sugar and flour disappear.
  4. Sprinkle a pinch of salt over the egg whites (at room temperature). Beat with a whisk until soft peaks form.
  5. Stir and fold half of the egg whites into the souffle base until combined. Gently fold in the remaining egg whites.
  6. Fill ramekins to the lip with batter.
  7. Bake in the preheated oven until puffed and browned, about 12 minutes.
  8. Serve immediately.
